They can also produce colored or varnished hard-boiled eggs, which have longer shelf lives than regular hard-boiled eggs, and are popular outside of the Easter season. With Easter approaching, production increases exponentially, with the machines coloring up to 20,000 eggs per hour.

The eggs are first preheated with steam, then boiled in water before getting slightly cooled down for the coloring process. Denis uses food-grade dye, similar to the one used for candies, which is applied using two different machines for different results. “One machine applies color by dipping, while the other one sprays patterns and multiple colors onto a single egg,” Denis explains. The intensity of the color also depends on the eggshell’s color, with brighter shades appearing on white eggs and darker shades on brown eggs.

Their customers are mainly dairy wholesalers who resell the colored eggs in stores. However, they also sell directly to a few regional stores. Deliveries for Easter orders are currently being fulfilled, and the colored eggs will be on many families’ tables this weekend, providing a colorful alternative to chocolate eggs.
