Sisters Bistro in Prague is a popular destination, especially during the holiday season. While some might assume the increase in business is due to the association of sandwiches with Christmas celebrations, manager Kateřina Čížková reveals it’s actually driven by the numerous company parties and gatherings that fill December calendars. “I would say the increased interest in this month is not strictly connected with Christmas,but rather with Christmas company parties and general gatherings towards the end of the year,which are multiplying. New year’s Eve celebrations are the same. For us, December is always the month when we have the largest sales,” explains Čížková.
The bistro’s popularity isn’t just a seasonal phenomenon. Year-round,their classic ham sandwich on potato salad with an egg reigns supreme.“This is a complete classic. But we also have a popular roast beef sandwich with celery remoulade and curry, but it’s still ahead of all the others with ham,” says Čížková.
Prague’s Priciest sandwiches?
Sisters Bistro might also hold the title of offering the most expensive sandwiches in Prague. The classic ham sandwich is priced at 53 kroner, roast beef at 59, and the salmon option reaches 66 kroner. Čížková defends the pricing, assuring customers it’s justified.
“I can say with a clear conscience that it is nothing excessive. The price is created by default according to conservative pricing. It is divided into quarter amounts, where one quarter is the cost of raw material, one quarter is the cost of labor, one quarter is energy, rents and so on, and the last quarter is profit. We have really more expensive raw materials and production costs in terms of personnel. Unlike other stores, we don’t just grease the sandwiches in the morning, we re-grease the sandwiches all day long, that’s what makes us different, we have them extremely fresh,” she explains.
This commitment to quality has been the bistro’s cornerstone for years.
Loyal Customers and a Taste of Tradition
“We have customers and they are not decreasing,” boasts Čížková. “The sandwich is not a trendy thing,which means that even the habits of customers have not changed much over the years. We’re just increasing the volume of what we’re selling, which is great, we’ve made a name for ourselves over the last few years. But as I said, trends don’t change, because the sandwich is a conservative thing, people always eat it the same way.”
To keep things captivating, Sisters bistro introduces a monthly special sandwich alongside their regular menu. “we’re testing what might be of interest to customers. It’s something we can play with because it’s only for one month, and if customers don’t react positively to it, it will be out of sale in a month, and we know we won’t have it for next year,” describes Čížková. December’s special features potato salad,smoked toast,dill panko breadcrumbs,and a touch of gold leaf. “People look forward to some sandwiches of the month for 12 months and we know we’ll be bringing them back on sale again.For example, in October we have a sandwich on pumpkin puree with deer leg, people love it,” he adds.
Even tourists find themselves falling for the charms of the Czech “chlebíček”. “Chlebíček is a Czech specialty, so they don’t know it at first, but when they taste it, they are satisfied,” Čížková concludes.

**Čížková:** Our prices reflect the quality of our ingredients and commitment to freshness. We use more expensive raw materials and maintain a higher standard of production.Unlike other shops, we constantly re-grease our sandwiches throughout the day to ensure they are always fresh. Our price structure aims for openness: 25% covers raw materials, 25% covers labor, 25% accounts for overhead like energy and rent, and the final 25% is profit.
**Archyde:** How do you keep the menu engaging for your loyal customers?
**Čížková:** While our core sandwiches remain popular, we introduce a monthly special to keep things exciting.This allows us to experiment with new flavors and see what resonates with customers. If a special doesn’t catch on, it’s retired after a month, making way for a fresh concept.This December, we’re offering a special featuring potato salad, smoked toast, dill panko breadcrumbs, and a touch of gold leaf.
