After the numerus clausus proposed last spring, to regulate the unsupervised development of restaurants endangering the entire profession, the Union of Hotel Trades and Industries (Umih) is working this fall on the development of training in management that the employers’ organization wants to make compulsory for any new entrepreneur in the sector.

Catering: a model to rethink and adapt

Whether they come from traditional catering or represent fast food, many establishments are lowering the curtain, while consumers have changed their behavior and their appetites. Restaurants are forced to review, if not their menu, at least their economic model

“Today, anyone can open a restaurant, but it can’t be improvised! », storms Franck Chaumès. While this sector of activity is seeing the number of collective proceedings before the commercial courts multiply, it is becoming urgent for the boss of the catering branch of the union to “support future professionals as best as possible”.

Guarantee of viability

Concretely, l’Umihwhich relies on its training branch, has been working for several weeks on the development of a “business permit”. This “training, only on management”, underlines the president of Umih 33, at the initiative of this approach, aims to “arm them in the face of the specific challenges of business creation in our sector”. As the Gironde restaurateur notes, “a good number of professionals embark on the entrepreneurial adventure without having benefited from adequate training. However, we firmly believe that prevention through the acquisition of the right skills can contribute to the viability of establishments and limit early closures which impact [aussi] the local economy. »

The Umih believes that it is up to it to set an example by being “an actor of good practices in our profession”, and goes further with this business license. “If we want it to be a guarantee, this training must be made compulsory for all new entrepreneurs,” asserts Franck Chaumès, supported by Thierry Marx, the confederal president of Umih. The two men therefore plan to submit their file, like the content of the training, to the government from the start of 2025.
