The fishy schnitzel: anchovy schnitzel or Cotolette di Alici – greetings from the kitchen

I love anchovies1 in all forms and physical states: fresh and canned, crispy fried, fried, steamed or in its liquid form as a sauce. But at the risk of people blaming this on my Austrianness, I still maintain that they are best served as schnitzel.
