Delicious, juicy and easy to make, these chicken meatballs are a great recipe to include on your weekly menu.

Ingredients

  • 700 g skinless chicken breast;
  • 1 medium onion;
  • 3 cloves of garlic;
  • 1 whole egg;
  • 120 g of solid ricotta;
  • 2 tablespoons of breadcrumbs;
  • 1/3 cup of parmesan cheese;
  • 1 teaspoon of lemon pepper – you can use any seasoning you want;
  • 1/2 cup of fresh parsley;
  • 1/2 teaspoon of salt.

Instructions

    1. In a food processor, start processing the chicken. Use the pulse function until a paste forms;
    2. Then add the onion, garlic, egg, ricotta, breadcrumbs, parmesan, seasoning and salt and process until combined;
    3. Lastly add the parsley and process until smooth;
    4. Make balls with the dough;
    5. If you are going to freeze them, place them in the freezer until they are very firm;
    6. If you’re preparing it right away, you can bake it, or quickly sear it – in a non-stick frying pan with a little olive oil until it turns golden and finish cooking in your preferred sauce.
