Pioneering work, carried out by French and Canadian researchers, reveals that E551, or silica dioxide, reduces tolerance to dietary proteins and promotes the development of celiac disease.

Silica dioxide is a food additive indicated by the code “E551” on packaging and commonly used as an anti-caking agent in freeze-dried products such as sachet soups, soluble coffees, crisps, cereal-based infant formula or confectionery on which a white powder can be seen, such as chewing gum or even sliced ​​cheese. Until now deemed “very safe” in food, scientific work has just identified a potential toxic danger linked to this additive.

French researchers from INRAE ​​(the National Research Institute for Agriculture, Food and the Environment), in collaboration with McMaster University in Canada, evaluated the reaction of mice to daily consumption, for three months, of this additive and conclude that it can promote the appearance of celiac disease in the event of a genetic predisposition to gluten intolerance.

An additive not always indicated on the packaging

Another problem with E551: this additive, composed of nanoparticles, is very commonly used as a “ technological aid » during certain stages of food processing, but then it does not always appear in the list of ingredients. An action on the intestinal immune system?

More precisely, E551 would act on the intestinal immune system by reducing the number of intestinal immune cells that produce anti-inflammatory molecules necessary to maintain food tolerance.

As the frequency of this disease continues to increase without fully knowing why, researchers have been keen to use exposure protocols that take into account the expectations of European and South American food safety agencies. Nord (European Food Safety Authority, Health Canada), working with doses equivalent to those to which we are exposed in order to “ guarantee that this potential danger can ultimately be taken into account in the assessment of the risk of consumption of E551 for humans ».
