The Netherlands and Belgium are the main European producing countries. Salsify is rich in fiber (called inulin), which has a beneficial effect on the digestive sphere. This inulin is a prebiotic (one of our intestines’ “favorite foods”). Salsify provides 57.9 calories/100g, 2.63g of proteins, 9.29g of carbohydrates. It is a vegetable appreciated by people who watch their weight. It contains vitamin C (3mg) good for immunity, very little vitamin E (0.8mg) for vision and skin and vitamins B1, B2, B3, B6 essential for the nervous system.
Researchers have found it to have hepatoprotective properties (which protect the liver). As well as a possible effect on certain cancer cells whose proliferation it might slow down (in addition to appropriate medical treatment). Its other components are trace elements: iron, copper, manganese, calcium, potassium, magnesium. Scorzonera is a black salsify but with a less fibrous texture. Dr Valnet recommended using salsify juices once morest warts.
Store it well
Store your fresh salsify in absorbent paper or a clean cloth in the vegetable drawer for 2 to 3 days.
