Yuzu

Yuzu, this precious citrus fruit native to eastern Asia, is loved for its distinctive scent that evokes both mandarin and lime. It is grown either as a long-day citrus fruit, harvested green for its zest and flavor, or as a short-day citrus fruit, picked when yellow ripe for its zest and juice. Despite its thick peel and the little juice it contains, the concentrated flavor of yuzu makes it essential in enriching dishes and drinks with a special tangy note. With an irregular epicarp, a diameter ranging from 5 to 8 cm, and an average weight of 110 g at maturity, the fruit is moderately juicy and contains large seeds. Although its juice has a fruity flavor, yuzu essential oil exudes a distinctive aroma. Japan, as the main producer and consumer, celebrates yuzu through hundreds of derived products and dedicates festivities to it at the end of the year.

Yamamomo

Under various names such as Yangmei, Myrica rubra, fraise chinoise or yamamomo, this delicious little fruit captivates with its juicy flesh reminiscent of redcurrants and its sweet-tart taste, making it ideal for making jams and refreshing drinks. With a diameter of 1.5 to 2.5 centimeters, the yamamomo has irregular skin and an intense red color, but capable of turning white and even purple, while its flesh displays a softer shade. Ylang-ylang
