Grand Hyatt’s Culinary Spectacle at Pedicon 2024: A Feast of Flavors and Expertise

Kochi ∙ At one time 500 kg of rice, 500 kg of mutton, 500 kg of fish, 300 kg of chicken… The national conference of paediatrics specialists ‘Pediconi’ is a gathering of flavors in the kitchen. In a conference attended by more than 6000 doctors, so many people have to be served food every time.

300 cooks are working in the kitchen of Bolgatti Grand Hyatt to prepare food for the conference. 200 chefs from Grand Hyatt hotels in different parts of the country were brought to Kochi for this purpose. Many of them are experts in preparing special dishes. There are 300 more people to serve food.

29 dishes are prepared every hour. Kerala’s unique fish resources have been given importance. Kedar Bobde, Executive Chef of Grand Hyatt said that the food menu has been prepared in such a way that every day at least one special Kerala dish is introduced.

The work of preparing lunch starts at 2 am. Lunch will be ready at half past ten. Cooked dishes will be served on the buffet table at 11.30 am. Dinner is prepared from 2 pm to 7:30 pm. A facility for 5000 people to eat at the same time has been prepared for the conference.

Food is prepared with special attention to cleanliness. Samples of each dish are sent for lab testing to ensure complete food safety. Grand Hyatt Hotel Manager Nibu Mathew said that the preparations for the Pedicon conference had already started six months ago.
