The media chef has just announced his departure from the Parisian palace where he has worked for fourteen years, notably at the head of Sur Mesure, two stars in the Michelin Guide.

It was through a letter to the two main French gastronomic guides, Michelin and Gault&Millau, which until then awarded him 2 stars and 4 toques respectively for Sur Mesure, that chef Thierry Marx announced his departure from Mandarin Oriental Paris .

The native of Ménilmontant has been working on rue Saint-Honoré (1st) for fourteen years, supervising the Michelin-starred restaurant but also the brasserie Le Camélia, the bars and room service. The palace has not yet announced the name of his replacement.

In the letter sent to the guides, Thierry Marx assures that he wants to concentrate on the Onor restaurant, which he launched last March in place of La Marée (8th), openly committed on both a social and environmental level. He explains in particular that this choice represents “the aim of 25 years of work on a different economy, with social and environmental impact. The right time to grow the Onor “label”.” reports Gault&Millau.

Trained with the Compagnons du Devoir as an apprentice pastry chef following a difficult schooling, spent in the army as a paratrooper and peacekeeper during the Lebanese War, Thierry Marx began his career in Cordheillan-Bages, in Bordeaux, before moving to Paris, at Claude Deligne at Taillevent, Philippe Legendre at George V or even Joël Robuchon.
