Ingredients (2 medium loaves)
For the sponge:
– 25 g of fresh yeast
– 1 tablespoon of honey
For the mass:
– 800 g of 0000 flour
– 10 gr
– 150 g of walnuts
– 150 gr cranberries
– 3 branches of fresh rosemary
– 50 gr of honey
– 400 ml milk or warm water
Preparation
Preheat the oven to 180° C.
For the sponge: Place the yeast together with the honey and 1/2 cup of warm water. Leave in a warm place without draft for half an hour.
For the time: Put the flour, salt, barely chopped walnuts, rosemary and cranberries in a bowl. Make a hole in the center, place the sponge there and add milk or warm water (with honey) until forming a soft, soft and smooth dough. Finish kneading on the counter, if it is made of wood better.
Let the bun rise for 30 minutes or until it doubles in volume. Degas the dough, give it the desired shape and let it rise once more. Place on parchment paper with flour and cook in a covered saucepan for 20 minutes. Uncover and cook for 15 more minutes. Let cool completely on a rack before eating.
