Ingredients:
– 500 g of mashed potatoes
– 1 cup of ricotta
– 450 g of whole wheat flour
– 5 tablespoons of grated cheese
– 1 egg
– 1 tablespoon of olive oil
– ¼ tsp nutmeg
– Salt and pepper to taste

Preparation

Boil the potatoes with plenty of water, and then prepare a puree. Cool and reserve. Next step, place the mashed potatoes in a bowl, along with the ricotta, oil, egg, grated cheese, and nutmeg. Season to taste.

Carefully combine the ingredients, and add the flour little by little until a soft dough is formed. Sprinkle the work counter with common flour, and knead small portions of dough, making a type of sausage, from which we will later cut our gnocchi.

Bring a large pot to a boil with plenty of water and salt and when it reaches a boil, add our gnocchi. Stir occasionally and let them cook for a minute, or until they begin to float to the surface.

Place the gnocchi and serve with tomato sauce of your choice, or white sauce, sprinkled with grated cheese and enjoy.
