Coaticook Dairy: Expanding Production to Meet Growing Demand for Ice Cream and Cheese

Millions of additional liters of ice cream might be produced within three years at the Coaticook Dairy. The company is investing more than $5 million to increase its production.

The owner of the Laiterie de Coaticook, Jean Provencher, maintains that the needs are mainly in terms of storage infrastructure. We needed additional refrigeration capacity. Ultimately, it is also regarding adding a production line to increase capacity because we want to automate, we want to improve our ecological footprint and ultimately increase production capacity.

We can talk regarding an additional 10 to 15 million liters of ice cream per year.

The investment also targets cheese production by making it more efficient, notably through automation. The owner explains that current production is rather artisanal.

The owner estimates that each year, nearly 450,000 kilos of cheese are produced in his company.

Ottawa is providing $2.2 million to the Dairy for this project. By increasing the production capacity of the Coaticook Dairy, we also increase the demand for Canadian milk.
