Millions of additional liters of ice cream might be produced within three years at the Coaticook Dairy. The company is investing more than $5 million to increase its production.
The owner of the Laiterie de Coaticook, Jean Provencher, maintains that the needs are mainly in terms of storage infrastructure. We needed additional refrigeration capacity. The investment also targets cheese production by making it more efficient, notably through automation. The owner explains that current production is rather artisanal.
The owner estimates that each year, nearly 450,000 kilos of cheese are produced in his company.
