The Cabras pond, a natural basin of 2,200 hectares among the largest in Europe, offers miraculous fishing. It is here that wild mullets are trapped while trying to reach the sea to lay their eggs, nicknamed the gold of Sardinia.

Gianni Spanu, workshop manager of the Pontis Cabras cooperative, awaits them every morning with the same impatience. To extract the bottarga, in other words, the pouch containing the mullet eggs, he delicately handles this marvel.
