This sweet potato salad with caramelized onions and cottage cheese is certainly perfect for serving for lunch. Even though it is very simple, the combination of flavors is delicious, as well as looking incredible to take to the table.

Without a doubt, choosing the right leaf for this salad plays a very important role, as we want to maintain the crunchiness even following adding the other ingredients. For this, I recommend sheets such as:
- American lettuce;
- Romaine lettuce;
- Chicory;
- Endive.
Simple salad dressing
Undeniably, a good dressing can make your everyday salad even tastier. But we don’t always have time to make more elaborate preparations. Furthermore, sometimes we want a lighter option than mustard and honey, for example.
To do this, take note of this proportion tip that can help you prepare a quick sauce, varying the ingredients:
- 2 tablespoons of good fat (it can be olive oil or some seed oil, as well as avocado);
- 1 spoon of acidic element (lemon or orange juice or even vinegar);
- 1/2 spoon of added flavor (honey, molasses, jam, fruit)
And of course, a touch of salt and black pepper always goes well.
To prepare, simply add all the ingredients to a pot and shake well until it forms a uniform mixture.

Ingredients
Sauce
- 4 tablespoons of olive oil;
- 1 tablespoon of honey;
- 2 tablespoons of lemon juice;
- 1 tablespoon of fresh parsley;
- 1/4 teaspoon of salt.
Salad
- 1 medium roasted sweet potato;
- 1 bunch of firm leaves;
- Cottage or feta – approximately 1/4 cup;
- Caramelized onions – approximately 1/2 cup;
- Roasted sunflower seeds to taste;
- Salt to taste;
- Sauce – as much as you like.
Instructions
- Start by roasting your potato. Around here, I like to season them with olive oil, salt and black pepper and bake them in the oven or air fryer until they are soft;
- Meanwhile, mix the sauce by adding all the ingredients into a pot and shaking until uniform;
- With the potatoes ready, let’s assemble the salad. Start with one of the leaves, then spread the roasted potatoes;
- Then add the caramelized onion, the cheese and finally drizzle over your sauce and finish with the sunflower seeds;
- Serve immediately.
Notes
- We do not recommend storing the ready-made salad. Our tip is to leave all the ingredients ready to just assemble when serving;
- If your sauce separates following a while, just shake once more to make it uniform;
- You can replace the sunflower seeds with crunchy nuts.
