Of Italian origin, Crustoli (Grostoli or Crostoli) is a type of bread dough, fried and dipped in sugar and cinnamon, but in Brazil it is also known as cueca upset. This recipe has a few versions, and all the ones I’ve eaten so far have been really delicious!

Is turned underwear Crustoli?

For me, both recipes are much more similar than different but I only say that because looking closer, the texture is always crunchy on the outside and they are often sprinkled with icing sugar.

Turned underwear

  • The dough for the turned underwear is made with wheat flour, sugar, eggs, butter (but it can be fat) and baking powder.
  • The dough is stretched, cut into strips and only then folded and fried.
  • Cueca upset is a common dessert at parties and celebrations in Brazil and is known by different names, such as “roscas de cassava” or “cat ears”.

Crustoli

  • The crustoli dough is also fried, but the ingredients change, in addition to wheat flour, sugar and eggs it contains wine (or other alcoholic liquid)
  • The crustoli dough is cut into different shapes such as strips, rhombuses or knots and then fried.
  • Crustoli is often sprinkled with powdered sugar or dipped in honey.

In my humble opinion, they are practically the same sweet, despite the Croatian origin of one and the Brazilian origin of the other, but both have the same preparation sequence and their variations are minimal.

My Upturned Underwear Recipe

For me, the great asset of flip-up underwear is its simplicity. After all, the recipe only requires a few common ingredients that are found in every home, such as wheat flour, sugar, eggs and oil for frying.

The dough is kneaded and then stretched, cut into strips and folded in a way that resembles the shape of underwear folded on a clothesline (I can’t see this, but there are those who can), it’s so easy to do that this first step can be even done with children.

Ingredients
2 eggs
2 tablespoons butter (but you can use margarine)
1/2 cup (tea) milk
6 tablespoons of sugar
1/2 tablespoon of baking powder
1 pinch of salt
1 tablespoon of cachaça
2 and 1/2 cups (tea) of wheat flour (approximately)
Frying oil
Powdered sugar and cinnamon for sprinkling or honey to accompany

Way of doing

In a bowl, mix the eggs, margarine, milk, sugar, yeast, salt and cachaça. Add the wheat flour, little by little, mixing initially with a spoon and then with your hands until it forms a homogeneous, soft dough that comes away from your hands.

Divide the dough into two parts and roll it out using a rolling pin on a floured surface until it is thin (approximately 0.5cm). Cut into medium rectangles (5X10cm, approximately).

Make a small cut in the middle of each rectangle and fold the dough inside. Fry, little by little, in hot oil until lightly golden. Remove, drain on paper towel and coat with sugar and cinnamon or serve with honey.
