Freezing Bread and Rice: A Game-Changer for Diabetics and Insulin Resistance

Dr. Magdy Al-Sheikh, a consultant internal medicine and endocrinologist, revealed in a video clip on his personal account on the TikTok platform that freezing bread and rice and reheating them once more is better for patients with diabetes and insulin resistance.

The sheikh said: “If you have diabetes or insulin resistance and love to eat starches such as rice, pasta, potatoes, and bread, and you cannot do without them, you can eat them without suffering from a severe increase in blood sugar.”

He continued: “According to an American study, diabetics and those with insulin resistance eating rice following cooking it and freezing it in the freezer improves their condition, because rice, pasta, and starches contain starch that breaks down.”

The internal medicine consultant added: “The glycemic rate is the rate of high blood sugar, meaning that if your blood sugar is 100 and you eat bread, it may reach 180, but if you eat two dates and your sugar level is 100, it may reach 120.”

He explained: “In order to reduce the glycemic index and calories in bread, it can be toasted golden. This turns it into fiber and reduces calories and its glycemic index, thus reducing calories and insulin resistance.”
