Benjamin and Sarah Elleboudt have been swimming in complete happiness for almost three years. The young couple, who left the Belgian capital for the commune of Saule several years ago, settled in the old “Ferme des 3 Moutons” in Ciplet with an ambitious project: to create a multifunctional center where, already, a delicatessen, a space dedicated to market gardening and a passionate breeding of rainbow trout.

The latter, in particular, is a real success. Difficult to find fresher fish in Hesbaye! “We have always loved the dynamics of short circuits,” Sarah explains to us. When we discovered aquaponics (Editor’s note: food production system that combines market gardening and fish farming), we said to ourselves: why not. And we got started! »

2 to 3,000 new trout
In 2021, the couple ordered between 800 and 1,000 trout fry, intended for sale once at market size. Last March, Benjamin and Sarah told us they had 2,000 fish. Today, the business is going great. To the point that they run out of space. “Our two ponds allow us to have 4,000 trout,” explains Sarah. The demand for trout, particularly smoked trout, continues to increase over time. »

Last winter, the couple had to limit sales. “Between January and the end of March, we no longer had any fish! It all went away at the end of the year. The demand is such that we sometimes have to refuse orders! » In order to satisfy the numerous requests, a third pool will therefore be built. “It will allow us to have 2 to 3,000 additional trout,” she continues. It is hoped that it will be operational by early next year. »

This additional pond will make it possible to group trout by specific generation (trout, “medium” and “adult” sizes) and “allow certain fish to develop longer so that they reach several kilos. »
Concretely, the sale of trout is done only on orders (https://3moutons.farm), for caterers, restaurateurs or individuals. “We go out twice a week. We fish it, empty it and supply it vacuum-packed. So it can be frozen. » The trout can also be smoked by an external workshop. Allow 20 euros per kilo of gutted trout.
