Surely we all know ketchup, ketchup or ketchup. It is a sweet and sour sauce of Chinese origin, made from tomatoes, sugar and vinegar with seasonings and various spices. He sold it as a tomato extract compound and claimed it was a great medicine that cured almost any kind of diseasefrom gastroenteritis, cold and even athlete’s foot.
In addition, there were carried out somewhat shocking campaigns with the aim of highlighting its medicinal properties. They talked regarding the need to use ketchup to help reduce cholesterol or even diseases such as prostate cancer.

However, in 1850 the American agency Food and Drug Administration (FDA)cut this type of belief with the ban on the medicinal properties of ketchup and, specifically, lycopene, since there was no evidence that this food had healing effects regarding any disease. However, many people grew fond of the flavor and produced their own ketchup at home.
A few years later, and 1876, Henry J Heinz took the recipe for this “medicinal” sauce and began mass-producing it under the name we all know today. To avoid adding all these harmful preservatives that were used by other producers, and eventually banned, Heinz drastically increased the amount of sugar and vinegar in the recipe, giving rise to the quintessential American sauce.

Ketchup, as we know it today, is an adaptation of a Chinese sauce called “ketsiap” or “ke-tsiap”, which was a mixture of sauce of fermented fish and various spices. This sauce reached the West through the merchants and sailorsand its popularity spread.
In the 19th century, ketchup evolved in the United States, where they began to be used local ingredients like tomatoes instead of the original fish sauce. It is attributed to H.J. Heinz having popularized and massified tomato sauce in the market, by launching his own version in 1876.
It is important to mention that there different varieties and styles of ketchup worldwide, but the most popular modern version originated in the United States and has become one of the most consumed sauces at the global level.
