Faimois Yohan Royer and Villersois Christian Eymael have a common passion for wine. And so they met on “the benches” of IFAPME during their training in wine growing. The two companions had the idea of creating a winery in June 2022, in premises they rent at Délice de Marie, rue de Waremme, in Villers-le-Bouillet. “We would like to create a wine cooperative, but you have to be at least three partners to publish statutes, mentions Christian Eymael who transforms the grapes there from the 10 hectares of vines he owns in Villers-le-Temple and Tihange (see attached). We are looking for partners and if possible owners of a few hectares of vines like me (Editor’s note: Yohan Royer does not have a vineyard but is passionate regarding winemaking and is also the master of the cellar). To get off to a good start and do a professional activity in the winery, there should ideally be at least 4 to 5 cooperators with hectares of vines. We already have good hopes of being joined eventually by Jean-François Orban who is testing a few vine plants in Strée and still has to finance his future planting.”
Operate at 5 small producers
Christian Eymael sees many advantages in a cellar in the form of a cooperative for small wine producers who have a few hectares of vines. “Growing the vines is one thing, then making wine is another job. There are always choices to be made, you have to constantly monitor the vats. That’s why we suggest that small producers join us rather than complicate their lives by building their own cellar. With the winery, it would cost them 2 million euros and it would take them 25 years to be profitable on their project. Our idea is to have 5 small producers and to vinify between 175 000 and 200,000 bottles per year. This is the objective for the next 5 years.”
Currently, the cellar (which might bear the name Miroir de Hesbaye-Meuse) is equipped with around ten vats co-financed by the first two partners. Thursday morning, with the help of Philippe Fagard (the former boss of Délice de Marie who sold the fruit pressing activity to his son to launch into sparkling wine under the name “Au fil des bulles”), Christian Eymael disgorged the future “Cuvée Renaissance” and its 1,350 bottles to be tasted from November.
