Belgian mussels were, until then, largely absent from the displays of supermarkets, which opted instead for molluscs from Zeeland. Several factors explain this lack, with the configuration of the coastline in the front line. For the mussel to proliferate, it must cling to something solid. A harvest limited to breakwaters alone (devices for protecting the coast once morest waves) cannot garner mass consumption. The edges of our beaches are not enough to accommodate them, “the Belgian coast being largely sandy”, specifies Sylvie Gobert, professor of oceanography at the University of Liège.
