carry each 1 kilo of quinotos some 700 grams of sugar, I used organic blonde. The kumquats are cut as they like or left whole, but they are punctured. Mix both things and bring to cook, it will start to boil and slowly it will start releasing water/juice from this process.

You have to cook until when you try putting a little jam on a plate and let it cool, you notice that the consistency is that of a real jam. Also drawing a line in the center of the jam with your finger, if you see that it is marked and does not come back together, it is ready. Always having let that little bit cool.

Once ready, it is packed well, boiling, in very clean jars. (water, detergent and dried with kitchen paper and alcohol). Fill to the screw mark and cap immediately. This is how the vacuum is made and this way they last out of the fridge closed for a year (maybe more).

Once opened you have to take care of the jam from cross contamination so it lasts. I remind you that this is 100% homemade and free of preservatives and additives. So do not put dirty cutlery or contaminated with other foods inside the jar. I recommend serving a little bit in a separate container and eating from there.
