If it saves time in the kitchen, a video produced by Le Parisien reveals the dangers of “quick cooking” rice on our health.
Despite the rise of teleworking, many French people have little time to cook, including in the evening. Fact, the solutions to save time are multiplying. And among the popular products in supermarkets, “quick cooking” or “express cooking” are among the best-selling.
Generally offered in the savory grocery section, the mention concerns in particular pasta capable of cooking in 3 minutes. But rice also has its versions ready in less than 5 minutes. Gold, quick cook rice is not necessarily recommended for our health.
This is the observation highlighted in one of the videos dedicated to our diet shared on the Youtube channel of the newspaper Le Parisien.
What makes “quick cook” rice so easy to prepare?
Normally, it takes between 12 and 20 minutes to cook rice in the traditional way. However, to speed up the cooking process, manufacturers are forced to “fracture” the grains of rice. For this, they carry out a pre-steaming.
The rise in pressure of the industrial pressure cooker will break the internal structure of the grain of rice and generate micro-cracks invisible to the naked eye. These aim to allow the boiling water to seep into every nook and cranny of the rice. But the faster the rice is to cook, the more it has been damaged in the factory before arriving in our pans.
And the shorter its cooking time, the greater its impact on our body.
A less satiating product
When unprocessed, rice remains a good food. Indeed, during digestion, the starch that is contained in each grain of rice is slowly changed into sugar. This provides the body with energy over a longer period of time and also makes digestion easier. Moreover, it is a food rich in fiber and antioxidants, basis of the diet in many countries including Japanese gastronomy.
However, this treatment to reduce the cooking time also accelerates the ingestion of starch by the body. We therefore consume more sugar, which will cause a sugar spike in the body. The feeling of satiety will therefore be less important 5 minutes with “quick cooking” rice than with classic rice.
Worse still: 5-minute rices cause episodes of hypoglycemia and hyperglycemia in a short time. Finally, you should know that even if it is faster to cook, it is generally less good and more expensive to buy. It is therefore recommended as far as possible to avoid them and to favor rice with a minimum cooking time of 10 minutes.
