They are made from beets, carrots or sweet potatoes, vegetable crisps are the queens of the aperitif and often invite themselves to the tables of those who want to pay attention to their health while having fun. They are given greater nutritional qualities than conventional crisps made from potatoes and we say to ourselves that they would be less harmful to healthbut is it true?

According to the expert interviewed by Medisite, no vegetable crisps are not a good substitute for potato crisps. “These are products rich in fat and salt”, she explains to us, “To be consumed in moderation.” Indeed, the saturated fatty acids they contain can eventually lead to hypertension, type 2 diabetes, increase the risk of developing cardiovascular disease and even the risk of cancer.

They also contain fast sugars. “They are much richer in quick sugars than classic crisps, informs us Sophie Javier, in particular those made from beets“Industrial sugar promotes the premature aging of all body tissues, including skin. It is therefore particularly harmful, and often present in ultra-processed products sold in supermarkets.

Health hazards

On the other hand, their nutritional qualities are more important than classic crisps. “They will bring more fiber than classic crisps”, explains Sophie Janvier. “It is their only real nutritional interest, because the fibers are good for health, intestinal in particular. They are high in energy (therefore in calories), but low in micro-nutrients (due to the high temperature of their cooking which kills the vitamins.) “

Far from being a healthy product, vegetable crisps even present dangers. “Like all fried products, They’re going to be high in fat.”, notes Sophie Janvier. “It is most often sunflower oil that is used for frying, but it is not an oil that has the best fatty acid profile”. As the dietician reminds us, it contains a lot of Omega 6, and thus promotes the imbalance between Omega 3 and Omega 6 which can cause chronic inflammation. “Cooked at high temperatures, chips also produce a pro-inflammatory and carcinogenic substance: l’acrylamide“, warns Sophie Janvier. “Crisps are among the products that contain the most. So we really have to limit its consumption,” she adds. “Finally, the crisps are salty, but the consumption of excess salt promotes hypertension and disturbances of the microbiota.”

As you will have understood, vegetable crisps are not healthy. Don’t be fooled by deceptive marketing brands that sell it and consume real vegetables. Fresh carrots or broccoli soaked in cottage cheese, for example. Avoid processed foods as much as possible, even if they contain vegetables, they mainly contain saturated fats and sugar, which are harmful to health.
