[컨슈머와이드-강진일 기자] On the followingnoon of the 18th of last month, seniors from the silver generation gathered to participate in the 2nd episode of the ‘Eco-friendly Food Cooking Class’ in Banpo General Social Welfare Center Shared Kitchen (five senses). This day is to learn how to cook for intestinal health and eco-friendliness.

This lecture consisted of learning how to catch both rabbits in an eco-friendly and intestinal health diet through ‘Namul Japchae’ and ‘Low Sodium Soybean Paste’.

First of all, the elders made namul japchae by blanching five types of eco-friendly agricultural products such as young radish, chamnamul, bangpungnamul, shoot shoots, and amaranth. The blanched greens are divided in half, and one side is mixed with low-salt soybean paste mixed with ground soybeans and organic soybean paste. Completed. Low-salt soybean paste is made by boiling soybeans thoroughly, cooling them completely, grinding them with boiling water, and mixing them with organic soybean paste (following 3 days of refrigeration).

Also, the elders made vegan red gamja seaweed soup. I cut red potatoes into cubes, put them in seaweed soup and boil them, and at the end, I added glass noodles and boiled them once to finish. The vegan red potato seaweed soup did not use any meat or seafood, which is generally used for seaweed soup, and was flavored with soybean paste.

The elderly who sampled vegetable japchae and vegan red potato and seaweed soup said in unison, “Namul japchae was called vermicelli japchae made with a lot of vegetables, but it was amazing that it was japchae made with only a variety of vegetables. It’s nice to be able to feel the whole thing. It’s all made with organic ingredients, so it’s good for our health and good for the environment, so it’s even better. It’s easy to make and eat, but it’s good for my body and the environment, so I’ll keep making and eating it.”

“Vegan red potato and seaweed soup has an impressive clean taste. In the meantime, I used beef to make the soup taste, but I never thought that you might make delicious seaweed soup with potatoes, seaweed, and soybean paste. You can make it with only organic vegetables, so it’s good for your health, so you can go home.” It is a menu that I want to recommend to my family and friends and share with them.”

Instructor Kang Seong-mi, director of the Organic Culture Center, said, “Dr. It is true that this brain health is true.’ In other words, if the intestines are healthy, the brain is also healthy, so it can be said that it is also helpful for the elderly to prevent dementia. There is something to eat. Fermented food and seasonal vegetables must be organic. The doenjang sold at the mart contains a lot of additives, so it is not a fermented food, but a processed food.” Because it is used, carbon neutrality can be achieved and it is good for our intestinal health. Furthermore, organic vegan life is ethical and eco-friendly value consumption and value investment for both the environment and humans to enjoy a healthy life.”
