In the spring, the Carinthian Buschenschenken start the new season once more. “Ausgsteckt is” means when the open operation is marked by a bush. In recent years, the number of operators has fallen by two-thirds, the working days are long and the demands are high.
It is also the motto at the Unterorter farm of the Egger family in St. Peter near Spittal an der Drau. Since the early 1990s, guests at Buschenschenke Egger have been provided with home-made, farm products. Host Karl Egger is a trained butcher and is therefore responsible for meat processing.
Open 200 days a year
Egger is the second generation to run the business with his wife Burgi and their three sons: “The boys’ bar work as such is not easy. It is produced in the morning and in the evening we still have to have time for the guests. It’s a long day when the Buschenschank is open. We want to bring good products to men and women and that requires a lot of diligence and attention.”
The Egger family has their Buschenschank open 200 days a year. In addition to the regular guests, many cyclists on the adjacent Drau Cycle Path ensure there is a lot going on, says Egger: “The influx of our guests has increased in recent years. They appreciate our products. Another major concern is that more and more younger guests come to us.”
The number of wine taverns has fallen by two thirds
The Buschenschenke Egger is one of around 50 wine taverns throughout Carinthia. The trend is falling sharply, said Petra Pobaschnig from the national association of farmers’ direct marketers: “Ten years ago there were regarding 150, currently there are regarding 50.”
About a third of these 50 companies have the “Good things from the farm” award, a quality mark that is only awarded to controlled companies that offer home-made products. Pobaschnig: “In these farms you can see how a pig grows up, what it eats – it has to be grown on your own farm – and how it is slaughtered.”
But not only the snack is produced in-house, the drinks from must to schnapps are also produced in-house.
