Apple pie with a healthy touch

Ingredients:
– 2 eggs
– 2 whites
– 1/3 cup skim milk or almond drink
– 3 green or red apples (peeled and cut into very thin slices)
– 1 cup oat flour (you buy it like this or process oats into flour)
– 1/3 cup of almond flour or 4 tablespoons of oil of preference (the idea is to provide moisture, you can also choose to put fruit such as 1/3 cup of applesauce or banana)
– 3 tablespoons of honey (can be replaced by 3 tablespoons of stevia)
– cinnamon to taste
– 1 teaspoon of baking powder
– 1 tsp vanilla extract

Preparation

Preheat oven to 180° C. Beat egg whites until stiff. Then slowly add the dry ingredients, then the yolks and the wet ingredients. Mix until integrated and carefully so as not to lower the whites so much. Add 2 sliced ​​apples and integrate (reserving one to decorate later on top).

Take to a cake pan or pudding dish (I used a 12 cm diameter silicone cake pan) in any case, you can use a traditional greased pudding dish and it looks great too. Distribute apple slices on top (they can add nuts). Bake for approximately 40 to 45 minutes.
