Good smells of chocolate this Thursday in Sorti(e) de cane… Marceline Michon went to meet three young entrepreneurs from the Jura who are embarking on a somewhat crazy project: to open their chocolate factory in Porrentruy. K.K.O.3 should welcome gourmets in December thanks to Aurélien Prêtre, pastry chef, Beatriz Pires Martins, pastry chef, and Alan Wacker, manager of a food-truck. It was in 2020 that the dream of the three Jurassians began, they who made themselves known by making Rubik’s chocolate cubes. The game, a universe that inspires the three friends: “we are big kids”, says Aurélien Prêtre, while the trio’s next creation might well be a chocolate Tetris.
A few trade secrets
If the skills are distributed among the three members of KKO3, the search for flavors, sales or marketing, production is done in groups. And the raw material is carefully chosen: “We wanted to take cocoa beans that were ethically correct, we paid attention to the colorings and for each raw material we can be careful and always find better”, explains Beatriz Pires Martins. Until pushing towards a little crazy associations, like chocolate with tomato sauce: “We are working on it”, assures Aurélien Prêtre. Notice to amateurs…. /mmi
