Speaking of fruits, what caught my attention this week is… pineapple! At $1.44 at Maxi, it is at its lowest in over a year! Keep an eye out for the displays, fans of canning and dehydration will certainly not miss the appointment! As long as we get to the heart of the matter: let’s talk regarding conservation. I have already mentioned climacteric fruit, that is, fruit that continues to ripen following picking. Many will be surprised to learn that pineapple is not one of them. A bit like citrus fruits, it will end up rotting if you wait too long before consuming it and will especially not become sweeter. In fact, the pineapple was harvested to be ready to eat. A yellow-rind pineapple is no guarantee that it is ripe. So how to choose it? Trust the leaves! The darker the green and the more frisky the leaves, the better! It can obviously stay a few days at room temperature, but you can prolong its life by transferring it to the refrigerator. Little wasteful tip: once the pineapple has been cut, you can use the heart to flavor water!
On the meat side, the half-loin at $1.77/lb at Maxi is at a friendly price. It’s the perfect piece to cut your own chops or pork cubes… and to stock up in the freezer!

You will need regarding a pound of chicken for your fried rice. You might bake four extra thighs (without the herbs) for a quick meal later in the week. Moreover, in the middle of winter, it is not the season for fresh herbs: you can always replace them with dried fine herbs, but in a lesser proportion (1 tbsp of fresh herbs = 1 tsp of dried herbs).
