Bored of eating water, this type of mixed vermicelli makes a very delicious dish, eating both bowls is still craving

This type of mixed vermicelli is sweet and sour, slightly spicy, cool, fresh, and can be done as much as you want.

Ingredient:

Salad making

– 3 small bunches of vermicelli; 1 tablespoon cooking oil; 5 tablespoons peanuts; 3 tablespoons dried shrimp; 250g shrimp, peeled and deveined.

– 100g of lean ground pork; 1 tablespoon fish sauce; ½ small onion, thinly sliced; 1 medium-sized dried purple onion, thinly sliced; 2 stalks of celery, washed and cut into pieces; 8 cherry tomatoes, washed and halved; ¼ cup cilantro, chopped

Salad dressing:

– 7 tablespoons of lemon juice; 6 tablespoons fish sauce; 1 ½ tablespoon jaggery or substitute with granulated sugar; 4 medium bird’s-eye chili peppers, minced; 3 cloves of garlic, minced.

Making:

The vermicelli is put in a bowl of cold water, soaked for 15 minutes, then rinsed and drained.

Make the sauce: Mix lemon juice, fish sauce and jaggery and beat until sugar dissolves. Then add chili and garlic and stir.

In a saucepan over low heat, add the avocado oil (or oil of your choice) and the shelled peanuts. Roast until the peanuts are golden brown, then remove the peanuts and let them cool.

In that pan, reduce heat, add the rest of the oil, add the dried shrimp and saute until fragrant and crispy for 2 minutes. Remove the shrimp and set it aside.

In a pot of water over high heat, bring to a boil. Add the vermicelli and simmer until tender, regarding 30 seconds. Take out to dry.

In that pot of water on high heat, bring the water back to a boil. Bring the shrimp to a boil until the shrimp is pink (for 2 minutes), then remove and drain.

Empty most of the water in that pot, leaving regarding 1 cup. Heat on high heat, add minced pork and fish sauce. Stir until meat is fully cooked, 3 minutes cooking time. Remove the meat to dry.

Mix vermicelli:

In a large mixing bowl, add the vermicelli, pork, shrimp, dried shrimp, onion, dried onion, celery, tomato, cilantro, and sauce. Mix well, leave for a while for the ingredients to infuse the sauce.

Then, mix shrimp and meat vermicelli on a plate, sprinkle with roasted peanuts and enjoy right away. The food is both fresh and delicious and not boring, ensuring that everyone who eats it will love it.
