Fried spring rolls are a familiar dish, indispensable on the Tet holiday of many families. The dish combines minced meat, vermicelli, kohlrabi, carrots, onions, chicken eggs, wood ear, shiitake mushrooms and spices to create a beautiful and delicious fried spring roll that captivates the diners.

Steps to make fried spring rolls:

– Traditional meat spring rolls according to the following recipe: 500gr of meat. 150g vermicelli/ 2 ear mushrooms/ 10 shiitake mushrooms/ 1 carrot/ 1 onion/ 200g bean sprouts/ kohlrabi 1/2 tuber/ egg 3 fruits/ pepper 3 spoons/ coriander, chopped onion. Depending on the amount of meat, increase or decrease the vermicelli, egg and bean sprouts respectively.

– Pack spring rolls with 1 normal spring rolls and 1/2 spring rolls
– Wrap spring rolls in your hand / fry spring rolls 2 times.

– You can mix eggs into the meat first, then mix the mixture and add a little cooking oil. But usually following mixing the filling, add the eggs and mix once more to mix well and then pack.
* How to make spring rolls dipping sauce
Sauce consists of 2 parts:
Part 1: kohlrabi, carrots trimmed with flowers, thinly sliced marinated with 1 tablespoon of sugar, 1 teaspoon of seasoning 20 minutes before, when to eat, mix into the dipping sauce
Part 2: Nem sauce mixed according to the ratio: 1 fish sauce / 1 sugar / 1 vinegar / 3 water / stir until the sugar dissolves until the garlic is crushed + chili, pepper.
* How to store spring rolls in the refrigerator to eat gradually
– Fry lightly with cooking oil and 1 piece of ginger, this way makes spring rolls more crispy than usual, spring rolls do not break.
– Leave to cool, arrange in a box by 1 layer of spring rolls and 1 layer of oil-absorbing paper. When putting in the box, it should not be too tight.
– When eating, defrost and fry in hot oil, or fry in an oil-free fryer, it’s always crispy.
* Note: Do not re-freeze following the spring rolls have been defrosted.
