When we talk regarding Indonesian cuisine in Amsterdam, Restaurant Blauw immediately comes to mind. And that is certainly not for nothing, because Blauw has been known for years for the spicy, tasty and colorful Indonesian dishes that are prepared with love. Indonesian cuisine is extremely versatile, including vegetarian options. So it is high time to combine all these goodies in a vegetarian bundle, according to the chefs of Blauw. The result is a beautiful thick pill full of inspiration, with the appropriate title ‘Vega Blue’.
Vega Blauw: seventy vegetarian and vegan recipes
In the book you will find Indonesian dishes with a modern twist. Seventy vegetarian and vegan recipes for the most beautiful dishes of the entire Indonesian archipelago, from West Sumatra to Java and from Sulawesi to Bali. Some dishes a bit more challenging, others very accessible. And no, you don’t have to be a star chef yourself to be able to use this book. The personal character of the book is striking: many dishes are accompanied by the name and a photo of the chef who added the dish to the book. This way you have the idea that you are not alone as a home chef, and that is nice.
Of course we immediately started looking into the book and we have already cooked a number of tasty dishes from it. In our opinion, a very tasty and accessible recipe to start with is the classic Nasi Goreng, or fried rice. In the well-known dish, vegetables, egg and herbs are added:
Fried rice
Ingredients for 4 people:
- 2 eggs
- Salty
- 6 tbsp oil
- 4 shallots, peeled and chopped
- 2 cloves garlic, minced
- 1 el chili grind
- 500 g of boiled rice
- 200 g leek, very finely chopped
- 2 el sweet soy sauce
- 1 tsp ground white pepper
Preparation method:
- Beat the eggs with a pinch of salt in a bowl
- Heat 5 tablespoons of oil in a wok or deep frying pan and fry the shallot and garlic for 3 minutes. Add the sambal and mix well.
- Add the cooked rice. Fry the rice over medium heat, stirring until the grains start to color slightly.
- Add the leek, kecap and white pepper and fry briefly while stirring.
- Heat the remaining tablespoon of oil in a frying pan and fry the beaten eggs while stirring. Mix the scrambled eggs with the fried rice and season the nasi with salt.
Wingko Tripe
There are also delicious desserts in the book, of which we don’t want to keep you from the ‘Wingko Babat’. Babat is a district in the municipality of Lamongan in East Java. Wingko is a delicious coconut cake from Babat and once more the recipe is very accessible.
Ingredients for 4 people:
- 200 g ketanmeel
- 50 g tapiocameel
- 350 grams of sugar
- 200 g grated, dried coconut
- 8 g vanilla sugar
- 1 tsp salt
- 50 g butter, melted
- 700 ml of coconut milk
- 1 egg, beaten
- 1 egg yolk, beaten with 1 tbsp water
- 2 tbsp sesame seeds
Need additional:
Preparation method:
- Cover the baking tin with baking paper and grease the paper with butter.
- Preheat the oven to 180 degrees.
- Place all ingredients except egg yolk and sesame seeds in a large bowl and mix to form a batter.
- Pour the batter into the baking pan.
- Place in the center of the oven and bake for 40 minutes.
- Remove the wingko from the oven, brush the top with the beaten egg yolk and sprinkle with the sesame seeds. Then bake for another 10-15 minutes until the wingko is golden brown.
- Let the wingko cool on a wire rack before slicing it. Delicious with jasmine tea.
