For its first anniversary, Yakuza by Olivier Paris presents new dishes imagined by the Portuguese chef Olivier da Costa, entrepreneur and founder of the concept. Whether it’s classic recipes such as yakuza tartare or specialties such as Carabinero Shrimp Nigiri, you just have to let yourself be tempted by your desires!
The story between Maison Albar Hotels and Yakuza by Olivier begins at Maison Albar Hotels – Le Monumental Palace in Porto and continues since September 2021 in the heart of Maison Albar Hotels – Le Vendome in Paris in the 9e borough. Yakuza By Olivier Paris is a real promise… a start for a magnificent culinary journey, mixing Mediterranean flavors with traditional sushi and sashimi from Japan. Olivier da Costa, chef and entrepreneur with more than 20 restaurants in four countries on three continents, including Yakuza Paris in partnership with Maison Albar Hotels, is dedicated to offering new ways to interpret Japanese cuisine.
On the occasion of the 1st anniversary of the opening of Yakuza by Olivier Paris, new creations are added to the festivities… the experiences at the table become incredibly unique, such as the Wakame Salad and the Sea Bass in Carpaccio, or the Soufflé Dulce de Leche and ice cream for dessert.
Gourmet lovers of the classics can discover the Yakuza tartare, made with fresh tuna, Duxelles mushrooms, truffles and caviar, served with a “Marrow Bone” marrow bone and Nigiri Wagyu, a succulent grilled wagyu with quail egg and truffle. Looking at the menu, there is no shortage of temptations among the novelties imagined and concocted by the know-how of Olivier da Costa: Nigiri Shrimp Carabinero or the Carabinero, seasoned with crispy rice and fresh coriander which enhances the whole. If you choose Nigiri Knife Crispy, you can find the chef’s Portuguese touch with the crabs, a Western-style garnish served with a chimichurri sauce.
Like a real open kitchen, the “Table du Chef” is the starting point for the Makisushi, where the Kyuri Maki makes the most of the best salmon, tuna and prawns. As for the Tamago Roll, it gives pride of place to fish… tuna and salmon gathered around chaplain’s eggs, fresh asparagus, chives and a mixture of various spices.
