Type 2 diabetes is a chronic condition in which blood sugar levels rise to dangerous levels if steps are not taken to reduce them.

The trial was conducted on 42 Japanese people, ages 21 to 64, whose blood sugar levels were above average, and the subjects ate a placebo or foods containing kale with a high-carbohydrate meal.

Why carbohydrates?

Carbs are quickly broken down into blood sugar, causing carbohydrate levels to rise soon following you eat them.

The researchers sought to investigate whether consumption of turnip might counteract these unwanted effects on blood sugar levels, and 30 to 120 minutes following eating the test meal, average blood sugar levels were determined.

What the researchers discovered

Average post-meal blood sugar levels were “significantly” lower in the kale group than in the placebo group.

“Our findings suggest that eating cabbage inhibits postprandial increases in plasma glucose levels with a single dose of 7 g, and that a dose of up to 14 g is safe,” the authors concluded.

What explains this effect?

Although the researchers haven’t suggested an explanation, kale is low in calories and carbohydrates.

This is important for two reasons. First, calories increase weight gain, which can hinder insulin production.
