Michelin 2022: a fourth star for Gilles Goujon

The three-starred man from Fontjoncouse can be delighted to see his Narbonnais colt Quentin Pellestor-Veyrier acquire a star for his Biterrois restaurant, the Alter-Native, which opened last May.

Some 41 new stars are entering the 2022 promotion of the famous gastronomic guide, including the three-star Aude chef in Fontjoncouse Gilles Goujon for his restaurant L’Alter-Native, opened barely a year ago in Béziers. A project that he leads with the 27-year-old chef from Narbonne who has worked in the kitchens of two-star Carcassonne Frank Putelat, Quentin Pellestor-Veyrier as well as with his two sons Axel and Enzo Goujon. Gilles Goujon and Quentin Pellestor-Veyrier had given themselves two years to win the first star. Michelin guide critics felt that such talent should not be kept waiting in a city devoid of stars.

Sad news for Philippe Deschamps who loses his star at the Domaine d’Auriac in Carcassonne, which does not detract from his talent and the quality of this Carcassonne institution. The 2022 winners: 3 stars: The Auberge du Vieux Puits in Fontjoncouse (Gilles Goujon). 2 stars: La Table in Carcassonne (Franck Putelat); The Table of Saint-Crescent in Narbonne (Lionel Giraud).1 star: the Barbican in Carcassonne (Jérôme Ryon); The Treasury Well at Lastours (Jean-Marc Boyer); The Grand Cap at Leucate (Erwann Houssin).
