Ingredients:
– 1 pineapple
– 2 bell peppers, diced
– ½ broccoli, cooked
– 1 cucumber, sliced
– 1 avocado, in cubes
– 1 bunch of coriander, chopped
– Grated lemon zest and juice, to taste
preparation:
1. Cut the pineapple in half, lengthwise, taking care to keep the leaves. Pass a knife along the inside edge of each half, make cuts in both directions in the center and hollow it out with the help of a spoon. Cut the inside into small cubes.
2. In a bowl, mix all the vegetables and the pineapple. Dress with subtle lemon juice, salt and pepper to taste.
3. Serve inside the hollowed out pineapple.
