5 vegetables that can lead to a sharp rise in blood sugar levels

Al-Marsad newspaper: A medical study published on the “Express” website showed the importance of insulin in regulating blood sugar levels, and without this moderate effect, blood sugar levels can rise to dangerous levels, causing a series of complications.

Vegetables are an essential component of a healthy, balanced diet, so don’t cut them out completely but it’s worth eating certain types in moderation.

Diabetes.co.uk explains that “foods with a high GI break down very quickly, causing a sharp rise in blood glucose levels.”

According to the Health Authority, vegetables with a high glycemic index include carrots, potatoes, parsnips, beetroot and sweet corn, and fruits with a low glycemic index include berries, peaches, kiwifruit and grapefruit.

The NHS notes, “Foods with a high glycemic index are not necessarily unhealthy and not all foods with a low glycemic index are healthy.”

For example, watermelon and parsnips are high in GI, while chocolate cake has a lower GI, and foods high in fat and protein or cooked with fat slow the absorption of carbohydrates, reducing their sugar content.
