Ingredients (16 units come out):
– 2 cups flour
– 1 cup of cocoa
– 5 teaspoons of baking powder
– 2 teaspoons of ground cinnamon
– 2 cups of milk
– 1 cup of water
– 1/3 cup of sunflower oil
– 1/3 cup maple syrup
– 1 tablespoon vanilla extract
– 1 cup dark chocolate chips
Preparation
In a large bowl add all the powders and mix well. Check that there are no cocoa balls left. Add milk, water, oil, vanilla, maple syrup and mix well. Add the chocolate and mix well.
Heat a skillet over medium/low heat that does not stick and start making the pancakes. Pour a ladle of mixture into the center of the pan and when it looks dry on top, turn it over. Continue like this until the mixture is finished.
Muffins de chocolate
Ingredients (from 5 to 7 units):
– 1 cup of flour 0000
– 1 teaspoon of baking powder
– 1/4 teaspoon of sea salt
– 3 tablespoons of cocoa powder
– 1/4 cup extra virgin coconut oil (not refined)
– 1 tablespoon vanilla extract
– 1/2 tablespoon of apple cider vinegar
– 1/2 cup + 1 tablespoon of brown sugar
– 5 tablespoons of coconut milk
– 5 tablespoons of applesauce
– Optional: 3 tablespoons chocolate chips or vegan dark chocolate chunks
Preparation
Preheat the oven to 170°C for 15 minutes. With the help of a strainer, sift the flour and place in a large bowl. Add baking powder, salt, and cocoa. Mix the ingredients. This will be the dry mix.
In a second bowl, place and mix well: coconut oil, vanilla, apple cider vinegar, sugar, coconut milk, and applesauce. Incorporate the ingredients well. This will be the liquid mixture.
Add the liquid mix to the dry mix. With the help of a mixer or a spatula, integrate both mixtures until you have a completely homogeneous mixture.
Divide the mixture between individual trays or a large muffin tray. Lay out the muffin/cupcake paper liner. Each tray should be a little more than half full, regarding 3/4 of the contents of each, as they will grow in size as they bake and this way the contents will not overflow.
If desired, place chocolate chips or chocolate chips on top of each muffin.
Bake for 30 minutes at 170°C. Remove from the oven and let cool for 15 minutes.
