Now we live in an era where cancer patients can often be found around us. How should I prepare my diet in preparation for ‘cancer’, which is also a disease that can be overcome only by eating well? Also, what should be the focus of nutrition management for people with kidney disease? Let’s listen to Dongsan Hospital’s nutrition team leader Kim Jin-hee.

What does potassium actually do in our body?
[계명대학교 동산의료원 김진희 영양팀장]
Potassium is involved in normal activities such as muscles and nerves. It is contained in all foods, especially in grains, vegetables, and fruits as a water-soluble substance. What is this potassium concentration? If it is high, you have to limit it to 2,000mg or less per day. If the potassium concentration in the blood is low, you can enjoy foods high in potassium, such as vegetables, raw fruits, and raw vegetables. Since we limit sodium content in vegetables from kidney disease, potassium, which has the same effect on the kidneys, keeps increasing, so to remove potassium, peel and slice thinly and soak in warm water all day to remove potassium. It dissolves because it is water soluble. 80-90% of it dissolves, so if you boil it, you have to soak all the vegetables in water for a long time, then boil and blanch the water, throw away the water, and boil the soup with new water. Also, green leaves, mushrooms, and pumpkins should be peeled or used only. Soak them in water and rinse several times before eating. After boiling, throw away the water and add new water to cook before eating.
Foods that contain a lot of potassium are evenly contained in all six food groups, especially grains, so if you have kidney disease or diabetes, we can’t serve multigrain rice and make it with white rice. There are many types of black beans or soybeans in the fish meat group, so we limit soybean products for patients with kidney disease. And since it is inevitable to use it in the vegetable group, if possible, the vegetable group is used with a lot of potassium removed according to the recipe. Even in fruits, especially in the case of many dried persimmons and bananas, there are restrictions.
I am limiting the use of nuts because they contain a lot of fat. And because it contains brown sugar and chocolate, it is limited as a snack for patients.
These are tips for a low-potassium diet. As I mentioned earlier, it is recommended that you eat white rice rather than multigrain rice. As I mentioned earlier, it would be better to eat soup with sungnyung or something like that in order to eat at least or not eat soup as much as possible. Protein intake is regarding 0.6 to 0.8 per kg of your body weight, so you need to consume very little. It belongs to the high-potassium group, but if possible, you can eat calcium by using a recipe while limiting vegetables and fruits, but when recommended like this, you can eat calcium by using a recipe.
Mostly, there are several treatments, but especially kidney disease patients are sodium-restricted, so potassium, which has the same effect, can cause heart disease.
To prevent this, patients on a sodium-restricted low-salt diet are also using a method to remove potassium as well.
